2012 Chelsea Goldschmidt Dry Creek Merlot
Chelsea is Nick’s eldest daughter and started this project with him back in 2006. With her bright red hair and outgoing personality, Chelsea was never described as shy. In turn, this sophisticated Merlot is bold and expressive, brimming with red fruit flavors and spice. Sourced from a small vineyard along Route 128 just east of Geyserville, Chelsea Merlot is a fine example of how Merlot can be made with lots of personality.
Winemaker Nick Goldschmidt comments, “This Merlot has full fruit up front and lots of structure to carry that fruit to a long, supple finish.”

Oriental Tri-Tip Steak

Use a Tri-Tip steak or roast for this recipe and adjust the cooking time accordingly. The Asian inspired flavors in this marinade makes this a great steak for any occasion. Serve over rice for a complete meal.
Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes
Yield: Serves 4 to 6
2 pounds beef tri-tip
4 green onions, sliced
1 cup soy sauce
3 tablespoon sesame oil
1 tablespoon sugar
1 tablespoon fresh ginger, chopped
4 cloves garlic, minced
1 teaspoon toasted sesame seeds
Trim beef tri-tip of excess fat. Combine other ingredients, except sesame seeds and mix well. Place beef tri-tip in a resealable plastic bag and cover with oriental marinade. Refrigerate for several hours (up to 8). Preheat grill. Remove beef tri-tip from marinade and discard marinade. Grill beef tri-tip over medium heat, turning occasionally for about 25 to 30 minutes depending on thickness of the cut. When done, remove from grill and let rest for 5 minutes. Carve across the grain, sprinkle with sesame seeds and serve.
