by the Simon and Garfunkel song repeating the words parsley, sage,
rosemary and thyme, this is my version using an aioli as the base.
4 boneless skinless chicken breasts,
cut in half
¾ C. Mayonaise
1 bulb garlic, minced
2 ½ T. Lemon Juice
1 T. fresh parsley, chopped
½ tsp. fresh sage, chopped
1 tsp. fresh rosemary, chopped
1 tsp. fresh thyme
Salt and pepper to taste
¼ C. dry white wine (preferably the Natura Sauvignon Blanc)
Salt and Pepper the chicken and brown one side in olive oil.
Meanwhile, make the aioli by combining the mayonnaise, garlic, lemon
juice, parsley, sage, rosemary and thyme in a blender or food processor.
Once the one side has been browned, turn the chicken and spread the
aioli evenly on top.
Pour the white wine around the sides of the chicken and cover for about
20 minutes, or the juices run clear.
Serve with orzo combined with the remaining aioli.
