Casablanca Grilled Pork Roast with Sun-Dried Tomato Pesto

3-4 lb. boneless pork loin roast
Zest of two lemons
3 cloves garlic, minced
¼ C. fresh rosemary
¼ C. fresh sage
½ tsp. ground coriander
½ tsp. ground cumin
¼ C. coarsely ground black pepper
1 T. salt

Place all the ingredients except the pork roast in a food processor and process until well mixed. Pat the pork roast dry and spread the mixture on all sides of the roast. Create a medium hot grill with indirect heat, usually done by turning off a burner or moving all the coals to one side. Place to pork on the unheated side, cover and let cook for about 1 -1 ¼ hours. The internal temperature should read 145 degrees, approximately 20 minutes per pound. Let the roast rest for about 10 minutes before serving with the Sun-Dried Tomato Pesto, recipe follows.

Sun-Dried Tomato Pesto
1 (3.5 0z.) package sun-dried tomatoes
2/3 C. Extra Virgin olive oil
1 C. fresh basil leaves
3 cloves garlic, minced
½ C. freshly grated Parmesan cheese
½ tsp. salt
¼ tsp. pepper

Combine all ingredients in a blender or food processor and blend until smooth.
