Curried Coconut Chicken
2 lbs. boneless, skinless chicken
1 tsp. salt and pepper to taste
1 ˝ Tbs. Sunflower oil
1 medium onion, chopped
2 cloves garlic, chopped
2 Tbs. Thai Green curry paste
1 14oz. can Coconut milk
1 14.5oz. can stewed, diced tomatoes
1 8 oz. can Tomato sauce
3 Tbs. Light Muscovado sugar
Season chicken with salt and pepper.
Heat oil in pan and add onions and garlic. When translucent, about 4-5 mins, add the green curry paste and the chicken and toss well. Cook chicken until firm, about 10-12 mins.
Stir in the coconut milk, diced tomatoes, tomato sauce and sugar. Cover and simmer, stirring occasionally, for about 30-40 mins.
Serve over rice.
