Honey Lime Chicken with Sriracha
8 boneless chicken thighs
salt and pepper
1/4 C. olive oil
juice of 1 lime
1 Tbs. white wine vinegar
1 Tbs. honey
1 Tbs. sriracha
1/2 large onion, sliced
cilantro
Season chicken with salt and pepper. Combine olive oil, lime juice, vinegar, honey, sriracha, onion and chicken. Mix, cover and refridgerate for about an hour. With oven pre-heated to 400 degrees, place chicken in a shallow backing dish. Pour the remaining mixture over and bake for about 25 minutes. Turn on broiler and broil for another 5 minutes to brown the tops. Remove from oven, top with cilantro and serve over rice.
