Recipe Ideas for Dr. Angoves Red Blend


1 pound  Kangaroo fillet
1 Cup of Mixed green leaves
1  Fennel bulb, small
2 Cucumbers, thinly sliced
1 Cup  Tomato slices
2 Teaspoon . Mint leaves, chopped
Quarter Cup  Cilantro, chopped

1 Jalapeno, chopped, no seeds
2 Garlic cloves, chopped
1 Teaspoon . Lemon Grass
2 Teaspoon . Lime juice
1 Teaspoon . Fish sauce
1 Teaspoon . Rice Syrup
6 Scallions, sliced
1 Tablespoon. Peanuts

1.    Brown the Kangaroo on all sides for approx 6-8 minutes total.  Cover with foil and allow to rest for 5 minutes before slicing.

2.    Arrange the salad ingredients and herbs on a large platter.  Combine the Heat a grill pan to very hot, dressing ingredients in a small jar.

3.    Once the Kangaroo has rested, slice it finely and arrange over the platter.  Drizzle the dressing over the meat and salad and sprinkle the peanuts on top.

4.    Note:  The dressing can be made in a blender or food processor.
