Food and Wine Pairing: Natura Cabernet Sauvignon

People’s Bourbon Barrel aged Porter Marinated Flank Steaks

 

The original form of this recipe by Amy Wisniewski uses strait Bourbon in the marinade.  I thought I could get the same flavor from a Bourbon aged beer.  The use of beer also helps tenderize the meat.

 

½ C. People’s Bourbon Barrel Aged Porter (or other Bourbon barrel aged beer)

¼ C. honey

1 T. soy sauce

1 T. Worcestershire sauce

Salt and pepper to taste.

1 ½ – 2 lbs. flank steak.

 

Combine the first five ingredients in a bowl and whisk well.  Using a large zip lock bag, add the flank steak and pour in the marinade.  Seal and allow to marinate at least 1 hour.  If marinating for longer than this (can be done overnight), place the sealed bag in the refrigerator. 

When ready, prepare a grill or grill pan to medium high heat.  Grill  5-6 minutes per side for medium rare.  I wouldn’t recommend grilling longer.  Remove and place on cutting board or serving dish and let rest at least 10 minutes. 

Slice the meat against the grain and serve.
