Broiled Chicken Wings with Spicy Peach Sauce

4-5 lbs. Chicken Wings
1 Tbs. Sunflower Oil
½ tsp. black pepper
2 ¼ tsp. salt
1 C.  Peach Preserves or Peach Jam
½ C. Fresh lime juice
1 garlic clove smashed
½ tsp. ground cumin
1 tsp. Sriracha Sauce

Preheat broiler.  Line bottom of a broiler pan with foil, then oil the rack.

Toss wings with oil, black pepper and salt in a large bowl, then spread in 1 layer on rack of broiler pan.  Broil 4-5 inches from the heat, turning once, until barely cooked through, 20-25 minutes.

While wings are broiling, blend the preserves, lime juice, garlic, cumin and Sriracha sauce in a food processor or blender until smooth.  Transfer to a small heavy saucepan and bring to a boil over moderate heat.  Reduce and simmer, stirring occasionally for about another minute.

Brush ¼ C. of sauce on wings and broil for 2-3 minutes.  Brush on another ¼ C. of the sauce and turn wings over.  Brush this side with another ¼ C. of sauce and broil until a deep, golden brown.  Brush with remaining sauce and serve.
